Camp oven damper

Years ago when living in Esperance WA. I as a sixteen year old boy and use to ride out to an older friends hobby farm near pink lake, whom use to have a regular disabled group from a organisation come out and spend the day on the farm. He use to arrange for me to show them how to make camp oven bread and damper while they prepared lunches, I use to use the damper mix as below but use to make a bread with self raising flour bread mix, Just make sure you use a big enough camp oven as the yeast in this dough will lift the lid. The original damper whilse hot with butter is the best.

Ingredients (serves 6)

900g (6 cups) plain flour
1 tbs baking powder
2tbs butter
500ml (2 cups) milk, warmed (or 2 cups water with powdered milk)
pinch of salt

Camp oven damper bread

Method

Combine flour, baking powder and a pinch of salt. Gradually add milk, stirring until you have a soft dough. Hint: add 1 tbs butter to dough for extra taste.
Place the camp oven in shallow hole with hot coals under it and heat until hot. Carefully smear (with paper towel) the rest of butter into hot camp oven and then place dough in oven, cover with a lid, surround camp oven with hot coals, including on the lid and bake for 30 minutes or until cooked through (cooking times may vary according to intensity of fire).
Serve with butter or that stew you have been cooking in another camp oven near by.
